Soup of the Day: Portuguese Potato Kale Soup

“Portuguese?” At an Asian place? Yep, that’s right. The Portuguese actually had a great influence on Thai cuisine. The spiciness people associate with Thai cuisine is  due to the Portuguese missionaries and traders who came to Thailand from South America. They were the ones who introduced the chili pepper to Thailand. You can also see these influences in many Thai desserts as well.

The Mum Mum family also has Portuguese ancestors, so this soup is in honor of them. A classic Portuguese soup that is so simple but, provides the ultimate comfort.

Golden potatoes, garlic, onions, kale & linguica (Portuguese sausage similar to Spanish chorizo) is simmered in a light chicken broth.
